The panel discussed how batches, of this make, from this distillery, are starting to become unmistakeable. This very specific, distinct and charismatic profile was immediately apparent. We noted thick, syrupy fruitiness, cooking oils, herbal essences, metal polishes, pure fruit cordials, soot and guava jam. Beautiful, and more than reminiscent of a certain deceased Lowlander. Reduction offered us a grassier, more playful aroma. Herbaceous, rapeseed oil, elderflower cordial, nettles, lemon zest and gorse in full bloom. The neat palate had a wonderfully bitter herbal and aniseed vibe. Lots of posh olive oil, overripe pineapple, exotic esters, tangy citrus, metallic aspects and crisp cereals. With water we found the fruits became even more pointedly exotic and tropical. Mango, papaya, kumquat and then bitter herbal notes, fir wood, watercress and sandalwood.
